Carlos Addarich, C.E.C. Joins the Cheyenne Mountain Resort as Executive Chef
Culinary globetrotter to forge ties with local farmers, brewers and local colleges
COLORADO SPRINGS, CO – DATE – Jay Rocha, general manager at Cheyenne Mountain Resort, has appointed Carlos Addarich to executive chef. Regarded as one of the largest hotel resorts in Colorado Springs, Addarich takes the helm of a 26-person team managing a $14 million annual food and beverage operation, which includes conference and special events, two restaurants, one bar lounge, in-room dining, as well as catered events for The Country Club of Colorado membership. Addarich joins the team at a pivotal time as the resort is undergoing property renovations, service standard enhancements and is developing a signature series of locally-inspired initiatives to leverage the best ingredients, resources and experiences available in Colorado Springs.
Efforts are currently underway to work with area farmers, ranchers, growers and craft breweries to develop dining experiences for guests that could range from seasonal dinners and signature resort craft beers to special menu features and tasting flights. In addition to localizing Cheyenne Mountain Resort’s dining experience, Addarich also plans to partner with area colleges to co-create a culinary externship program for students. The program would enable students to earn college credits while completing a hands-on apprenticeship at the resort, a first-time endeavor for the resort.
Born in Puerto Rico, Addarich’s curiosity in the kitchen and innate passion for cooking derailed his college plans to graduate with a degree in Industrial Management. In 1990, he succumbed to his love for the kitchen and set course on an ambitious adventure. Upon graduating from Baltimore International College and The European Educational Centre in the Republic of Ireland, Addarich enrolled into The Greenbrier Culinary Apprentice Program in West Virginia, one of the most renowned culinary programs in the United States. After working as a chef apprentice at The Greenbrier Resort, Addarich joined the team as a first assistant round chef. After three years, he left for the Swiss Alps and joined the Hotel Allegro & Congress Kursaal as demi-chef tournant. He returned to the United States and joined the Walt Disney World Swan and Dolphin Resort as sous chef and was soon promoted to restaurant chef, and then to banquet chef. He joined the exclusive Cap Juluca in Anguilla, British West Indies as executive sous chef and thereafter held various chef titles at other establishments like Todd English’s bluezoo in Orlando, the Peabody Hotel Orlando and most recently executive chef at Hammock Beach Resort & Country Club in Palm Coast, Florida.
